Another fantastic class under the guidance of Terri Salminen.
To stay connected with our alumni, we organize special collaboration classes featuring former students.

Our Professional Chef Program is rich with international students, allowing everyone to benefit from the diverse cultures and flavors each participant brings to the table.

This time, our Dominican alumnus, Vick, introduced our students to Dominican-French influenced cuisine with his signature dish, featuring our special Oranjehoen chicken.

The dish consisted of a whole poached chicken in vegetable broth with a chicken wing glaze reduction, served alongside parsnip purée and fried aioli.
For our students, this session was a lesson in patience, observation, and attention to detail. A big thank you to Vick for taking us on his personal culinary journey and sharing his expertise. And to Terri Salminen for the beautiful pictures taken at our Horeca Academie in Amsterdam Kitchen Republic
